Keep the potatoes white

  1. Store Potatoes Properly:

    • Keep potatoes in a cool, dark place with good ventilation. A root cellar or a pantry is ideal. Avoid storing potatoes near onions, as the gases they release can speed up the aging process.
  2. Keep Them Dry:

    • Moisture can lead to the development of bacteria and cause potatoes to turn brown. Store them in a dry environment and avoid washing them until you're ready to use them.
  3. Avoid Exposure to Light:

    • Exposure to light can cause potatoes to produce chlorophyll, leading to a greenish tint and a bitter taste. Keep them in a dark place or store them in a paper bag to block out light.
  4. Don't Store Potatoes Near Onions:

    • Onions release gases that can accelerate the aging process of potatoes. Keep potatoes and onions in separate storage areas.
  5. Store Whole, Unpeeled Potatoes:

    • The skin acts as a natural barrier, helping to protect the inner flesh from oxidation. Store potatoes with their skins on for a longer shelf life.
  6. Acidulate the Water:

    • If you need to soak peeled or sliced potatoes before cooking, add a little acid to the water. Lemon juice or vinegar can help prevent browning. Use about 1 tablespoon of lemon juice or vinegar per cup of water.
  7. Use Cold Water:

    • When soaking potatoes, use cold water rather than warm or hot water. Cold water slows down the enzymatic browning reaction.
  8. Cook Potatoes Immediately After Peeling:

    • If you peel potatoes in advance, cook them as soon as possible to minimize exposure to air and prevent browning.
  9. Blanch Before Freezing:

    • If you plan to freeze potatoes, blanch them before freezing. Blanching helps preserve the color and texture of the potatoes.
  10. Store Cut Potatoes in Water:

    • If you need to store peeled or cut potatoes in the refrigerator for a short time, submerge them in water. Change the water every 4-6 hours to keep it fresh.
  11. Choose Low-Starch Varieties:

    • Low-starch potatoes, such as red or waxy potatoes, are less prone to browning. Consider using these varieties when you want to keep the potatoes white.

By following these tips, you can maintain the white color of your potatoes and ensure they stay fresh for a longer period.
